BOSCHIVO


Named after an ancient historical toponym,“Boschivo” is our Supertuscan wine, a blend of Cabernet Sauvignon and Cabernet Franc from our best quality vineyards. Our estate is on the Tuscan coast, on the edge with the DOC Bolgheri Appellation. For us, the accurate selection work we are doing both in the vineyards and the cellar aims at the best expression of two prestigious varieties for this terroir. To reach this goal every technical aspect is thought to keep a low production and consequently the highest quality grapes concentration in polyfenols and aromas.


Winemaking

During the harvesting season, we work hard to select for “Boschivo” the best clusters and the best grapes, which are later soflty pressed to obtain the must.The single varieties composing the wine blend are separately vinificated, afterwards the must stays in contact with the grapes skins for a period of twenty-five days, inside conical oak vats at a controlled temperature. Each variety then undergoes a maturing period inside 80 hl oak barrels for a period of eighteen months. Before the commercial release, the single varieties are together assembled and refine inside the bottle for a period of three months.
